Parqueoliva quince vinegar is produced by artisans who only use quinces from the Sierra Subbética in Córdoba, harvested directly from the tree at their optimal ripeness.
Description
Vinegar made of the Zagrilla quince variety, typical of the Sierra Subbética Reserve region. Made without aging to preserve the a flavors of this aromatic fruit.
This vinegar is obtained from selected bio-certified quinces, harvested in mid-October, which are ground to juice, with the ultimate goal - this much-prized sweet vinegar.
An aroma of quince compote combined with acetic acid and hints of toast and sweetness. Retronasal aroma of nuts and white flowers.
The taste is pleasant, intense and refreshing, with balanced acidity, soft and with bittersweet tones.
Suitable use: Perfect with cheese with quince jelly (Vinavin Vinegar Guide 2017)
Beetroot, vinegar anchovies, fruit cocktail with prunes (or raisins) marinated in vinegar.
