On a plant-based basis, Plant Bite is convincing for the eyes, the sense of smell, and the taste! We have tried culinary masterpieces; it's part of our work. We provide Mediterranean products to the best chefs and top restaurants across the country. We know each other, we taste regularly, we exchange opinions.
We have known about the concept of Plant Bite since before the opening of the restaurant at 46 Shipka Street. It's not vegan cuisine, but dishes with plant-based proteins suitable for vegetarians and vegans. To counter our skepticism, Plamen Evropeyski invited us to see for ourselves. We weren't skeptical, we simply enjoy the Mediterranean menu and the traditional taste. That's what we believe in, and our cause is to convince everyone here that the Mediterranean way of life is not only good and healthy for us but also natural for Bulgarians.
Well, we went and saw.. Before we tried, and saw.we saw that everything looks genuine—both the beef, the chicken, and the desserts. The first step is to satisfy the eyes. The second is the aroma. The third and fourth are the texture and taste.
We convinced ourselves that the calamari salad looks and smells like breaded shrimp, not mushroom bites. But the texture impressed us the most, with the same slightly chewy density, lightly crispy like calamari. This non-calamari salad was prepared in front of us, and everything is completely honest!

The burgers are absolutely authentic. And even though they look enticing with their colors, the soy-based patty has an authentic texture, it's juicy and releases juices—everything you expect from a burger. (Plant Bite provides you with a burger holder made entirely of corn polymer so that the juicy patty won't drip, and the salads won't fall out!)

The menu is entirely captivating: dishes and salads without beef, chicken, or seafood! Desserts without animal products. Each item on the menu is recommended with a drink: wine or a cocktail developed by 5L Speakeasy Bar.

Spices are a separate topic. They are game-changers because they can be added at the end to a dish that is already cooked. They are full-fledged in cold salads. Infusion? - we guessed. No - natural ferments, Daria from the Bulgarian startup CMYK IngredientsMechanically pressed plant seasonings unfold under the influence of their own natural ferments (similar to how taste unfolds in the mouth when we chew), and subsequently liquefy, ready for use. This way, black pepper, smoked paprika, or bay leaf don't have to contribute to the taste of the dish through thermal processing and marinating. The taste unfolds immediately after adding them with a pipette!

In fact, the dishes at Plant Bite are not meat substitutes. They are plant-based followers of its taste, based on care for oneself, living beings, and nature as a whole.
Green pitted grilled Halkidiki olive - smoked with beechwood chips in a marinade of lime, oregano, garlic, and extra virgin olive oil. We have been working with Chef Plamen Evropeyski for a while now. His recipes are innovative and provocative but always balanced so as not to scandalize our Mediterranean palate. Let's highlight Plamen's contribution to one of our most beloved products Зелена ръчно грилована маслина Халкидики, smoked with beechwood chips and marinated in olive oil, lime zest, oregano, and garlic. Traditional Greek product and Bulgarian ingenuity create an amazing recipe and a genuine appetizer.
Plant Bite officially opened on September 9, 2021, and we had the chance to try the menu while the final details were being completed at the "Shipka" Street 46 restaurant.
