Castelvetrano olives are a beloved Italian delicacy. They are often referred to as "dolce" (sweet) and come from Castelvetrano, Sicily, representing the olive variety known as Nocellara del Belice. They have a round shape, vibrant green color, mild sweetness, and high oil content. 

With their deep green hue, slight sweetness, distinctly buttery, they are excellently combined with sheep's cheese and fit perfectly into salads, antipasti and hors d'oeuvres.
