We always take pleasure in experimenting in the name of good cuisine and our Mediterranean cause. Take, for example, the the Green Halkidiki olive.We know it as spicy and crispy, sometimes stuffed with blanched almonds or peppers, other times with cheese. It is a classic among dessert olives. This time with this Greek olive , we did something bold and different. Just follow along:
We threw it on the barbecue to soften and reduce. It is hand-roasted in small quantities: eye to see, hand to touch, aiming for precise taste. Precision resides solely in the palate, you know?
Then we let it marinate in a mixture of extra virgin olive oil, lime, oregano, and garlic. That's when its assertive character softens, delicately flavored by traditional Mediterranean ingredients, taking on a certain tenderness.
Finally, we smoked this magic with oak shavings to give it that aroma that initiates a wonderment - what are you? An appetizer, a main course, a meze? An accent in a salad or an irresistible treat?
